Yes, skeds are permitted if set up by non-amateur means PRIOR to the start of Field Day. The "General Rules for All ARRL Contests" apply to Field Day and prohibit making skeds by non-amateur means during the contest period.
However, you won't need to set up a sked to make a QSO. All of the satellites will be packed with stations during Field Day. Just get on and make QSOs. Please be sure to practice with your equipment before Field Day.

Hi Folks,
I have read through the Field Day rules and was looking for if it was not allowable to make a sked for a contact during Field Day. I could not find such a rule, but may have missed it. If it is allowed, would anyone be interested in setting up a sked? I am in the Shenandoah Valley of Virginia grid FM08. Would probably prefer to use an SSB satellite. If this is disallowed, that is fine, please don't blow me up.....
