It's not a problem caused by Windows XP as such. It's the video card and video drivers, and the problematic video cards started shipping around the same time as Windows XP. They run InstantTrack fine in full screen mode, but can't show the graphics modes used by InstantTrack in a window.
Some such problems can be avoided by running InstantTrack in VGA mode. This can be done by setting vga_resolution = 2 in the IT.INI configuration file.
A good way to work around the incompatibility is to run InstantTrack inside an emulation environment that knows how to deal with modern video hardware. DOSBox is free and works for this purpose.
