After spending 13 years in television broadcasting I can attest to the fact that providing full motion video of the proceedings would be a big job and take up a lot of bandwidth. You'd need quite a few DVD's. Also, shooting the screen with a video camera would result in a relatively low resolution and poorly lit image. Your suggestion is a good compromise - capture the presenter's audio and link it to the slide presentation. You could add a few shots of the presenter and the audience to add some intimacy.

To do a reasonable job of producing a DVD video of each presentation is quite a task - It takes more than simply pointing a video camera at the slides which are often unreadable or the audio is c$£p. It would be better to get a simple audio recording and then listen to that whilst looking at still images of the slides.
At the AMSAT-UK colloquium this year I collected together as many of the presentations as I could and converted each to a format viewable as a slide show in a web browser. I'd liked to have all the presentations and if I'd managed to get it set up the Audio recordings as well.
