Straight Key Night has been going for many years. Of course, if you really did want to use CW on an FM bird, you'd just need to key an audio oscillator (like a practice oscillator) into your mic input. ;)
But you'd be best using the linear birds. :D

We can set up a repeater on AO-51 with a SSB uplink for SKN, so CW would work fine.
A request to ao51-modes@amsat.org for this will get the ball rolling....
