Anything with an FTDI chip. Nice to have would be TX/RX lights, but not necessary. Preferably one with a toroid one one side, but those are pretty rare.

Here at work I use a Startech ICUSB234858I: https://www.startech.com/Cards-Adapters/Serial-Cards-Adapters/usb-rs232-422-...
You probably don't need the RS422/RS485 that it provides in addition to rs232 but it's a nice box and it has the nice feature that the COM ports come up in the same order every time, something that I've struggled with using the single USB to serial adapters.
