Actually, according to Dan Henderson, N1ND - ARRL Regulatory Information Manager - Field Day Manager you are only allowed one QSO per FM satellite in the ARRL rules.
I asked for and got an "official" clarification stating if you work L/U on AO-51 then V/U would be a no-no, or vise versa. The quote was "You can have only one QSO per satellite ..... Doesn't matter how many transponders, etc."

Yes, they are both different events that occur at the same time. AMSAT uses the same start time and date and ending time and date as the ARRL Field Day. All AMSAT Field Day rules are available at the AMSAT web site. In the *Site Quick Reference* choose Field Day Competition.
