
Does anyone know where I can access the most recent frequency guide from AMSAT? Mine from May 2020 might still be the most up to date but I'd like to know for the future.

It's available in the AMSAT portal. Log in to the portal ( https://launch.amsat.org/), click on Member Resources, and it's right there.
May 2020 is the date on the one there, so it looks like you have the latest.

The satellite teams describe their mission, often listing web pages for their team. The satellites which have been coordinated by the IARU will list the frequency, modulation, data rate, voice, etc.
