The fix turned out to be switching to the AMSAT naming convention. One click, and things started working just in time for the SO-50 satellite pass.
The upside to this is that I did spend some "quality time" with the software and learned a few things along the way. For example, the use of the Frequency Correction inside the CAT window instead of using the "RIT" function on the rig. Works much better, especially on FM.
Also found that AMSAT UK (of which I'm also a member) offers an English translation to the Doppler.SQF file on their web site. Helped me to understand the Doppler.SQF file better, and should make adding future satellites easier.
The AMSAT list has been the best resource for a new satellite operator. With no local Elmer, my online Elmers are more than taking up the slack. Thanks again, Mark--you rock!

Quick thoughts--
If the name of the satellite is different between the Keps file and Doppler.SQF, you're going to have troubles (AmsatNames.txt file helps with that, but adds a layer or potentional problems, too....). They have to match...UNLESS you use AmsatNames.txt (read about it. It's worth setting up and adding to with every new bird you want to track/work).
Regarding the different configurations--you can do a good old select all/copy/paste to copy the one you want to the others. You have to to unhide files/folders, then you can see them here: "C:\Users\yourusername\AppData\Roaming\SatPC32"
Just copy from that location to CfgII or III or IV, for example. Then you can at least start out at the same point...
